Psychology
An elevator racing sideways reflects confusion at a reality that defies expectations; such absurd motion is typical of REM dreams, when waking logic loosens. Excitement shows room to enjoy change; clinging to the rail, anxiety about a turn you did not choose.
Folklore and history
No fixed lore exists, but elevators became a stage for internet horror: the well-known "elevator ritual" rumor claims that pressing floors in a set order takes you to another world. Children's fiction also has elevators flying in every direction. Dream readers see unusual motion as surprise developments or lateral moves such as a transfer.

This site's view
In this site's view, a sideways elevator heads nowhere in particular. A familiar place beyond the doors means a detour that still leads home; unknown scenery, an unnamed option sprouting in you. A silent, empty town outside may reflect less hope for change than a small weariness, a wish to step away from where you are and rest for a while.
Going deeper: our reading
We think of lifts as moving up and down, but on hillsides some places use inclined elevators that travel at an angle. In this site's reading, a sideways elevator can reflect confusion over a lateral move, neither promotion nor demotion, such as a transfer to another department or a shift to a new field at the same level. Change that is neither up nor down is hard to judge as progress or stagnation, and the mind may show that ambiguity as a strange vehicle. Scenery sliding past glass suggests you are trying to watch where the change leads. No window, only sideways motion, points to unease at not being told where you are going. This is our speculation, but if you felt calm while moving sideways, you are finding new possibilities in breadth rather than height.
What to do on waking
Take a different route home or shift sideways in some small way. An unexpected find may point where the dream was heading.
