Psychology
The weasel slipping through narrow gaps stands for things that creep in unnoticed. Small doubts about people or worries you look away from may take its quick form. Seeing it at work suggests wariness of someone's cunning; at home, unspoken suspicion of family; becoming the weasel yourself, guilt about your own slyness.
Folklore and history
In Japan the weasel shape-shifts like foxes and badgers, and one crossing your path is an ill omen. In snowy regions, unexplained cuts on windy days were blamed on an invisible weasel, the kamaitachi; some places said it came as three, one knocking you down, one cutting, one applying salve so the wound would not bleed.

This site's view
In this site's view, the fear of a weasel dream is that the wound is already there when you notice. The kamaitachi tale teaches that some cuts are made without pain or blood. A weasel crossing ahead asks you to pause on your current path; one slipping into the house hints at unspoken resentment at home or work. Chasing it away is a sign of escaping trouble.
Going deeper: our reading
Despite its small size, the weasel is a skilled hunter of mice and rats, once sometimes seen as a helper for homes and fields. Because it releases a strong smell when cornered, Japanese speaks of a weasel's 'last fart' as a final desperate act, and an endless back-and-forth with no winner is called 'weasel tag'. In this site's reading, a weasel dream ties to those phrases: a counterattack when cornered, or going round in circles. A weasel that kept escaping may show you are tired of solving the same problem only to end up back at the start. Being sprayed by one you cornered may warn that blaming someone too hard brings backlash. This is our speculation, but seeing a weasel catch a rat may mean someone nearby can quickly clear a nuisance.

In Japan, people once tried to turn a worrying dream for the better: a baku charm under the pillow, telling the dream to a nandina bush, or reciting an old dream-turning poem. Read the column on dream trading and dream-turning
