Psychology
Sunflowers reflect a wish to face the bright side and a straightforward admiration for someone. A wide-open bloom suggests your good qualities are being seen; a drooping one may mean you are tired of acting cheerful.
Folklore and history
Sunflowers are native to North America and reached Japan via Europe. Young plants turn to follow the sun, said to inspire the Japanese name himawari, sun-turner. Van Gogh painted them repeatedly, and they carry both brightness and a hint of sorrow.

This site's view
In this site's view, a sunflower asks whom you have made your sun. Following one person too closely can leave shallow roots. A field all facing one way means you conform too much; one flower facing elsewhere is your true self.
Going deeper: our reading
Sunflowers may recall sowing seeds at elementary school and recording their height in a summer vacation diary; many were amazed as the plants quickly outgrew them. At the heart of the big flower, countless seeds pack together in spirals, becoming next year's life in autumn; one bloom holds many future flowers. In this site's reading, people who dream of sunflowers often want to feel their own growth clearly, or hope what they have nurtured will carry on. A sunflower outgrowing you suggests joy, with a little loneliness, as people or things you raised grow beyond you; wandering a sunflower maze, searching for your direction in bright surroundings; harvesting seeds, preparing to use present experience in a new challenge. This is our speculation, but the dream may teach that brightness is handed on to the next season.
