Psychology
Drinking water shows a wish to quench thirst of body or heart. Real thirst during sleep often causes it, a clear case of bodily sensation entering dreams. Emotionally, it may signal a need for rest and feeling.
Folklore and history
In Japan, the first water drawn on New Year's morning is called wakamizu; offered to the gods or used for tea, it is believed to renew and protect you for the year. Water purifies and renews, and clear, delicious water in dreams signals recovery.

This site's view
In this site's view, the water's source matters. Spring or well water means strength rising within; water handed to you means accept help. Hesitantly drinking murky water asks if you are forcing yourself to fit a wrong place.
Going deeper: our reading
Water is so taken for granted that we rarely notice it: turn a tap and it flows, step into a shop and it is there. Yet when the supply is cut, disaster strikes or a hike leaves you nearly dry, its value hits hard. Being almost tasteless, water can also taste astonishingly good depending on where you drink it, like a glass after sweating or cold spring water on a trip. In this site's reading, people who dream of drinking water are often at a point where they should notice support so ordinary it was overlooked. Drinking endlessly without quenching your thirst may reveal a deep loneliness that surface comfort cannot fill. This is our speculation, but sharing one bottle with someone shows the heart confirming a bond with a person who helped you through hard times. If real thirst or other symptoms persist, please consult a doctor.
What to do on waking
Drink a glass of water slowly as soon as you wake. If dryness or discomfort persists, see a doctor about any symptoms.
